I got my calibration done by someone who came highly recommended on the AVS Forums. Unfortunately, he only takes trips if he gets a group of TVs to do so I don't know if you would be able to get him. Here is his site:

It ran me $375 minus $50 for referring a few friends. I also had him calibrate my HT gear for $85.
You can definitely run your Xbox in 1080p on the TV, it just won't show up as that. I am not positive on the technical aspects why, but it does work. (I have a PS3 hooked up through HDMI 1.3a)
