When you load up the game and are on the main menu, there should be an option for Rosters, if you choose this you should the be able to go into whatever team you want to edit and do so.
It might be an idea to makes a note of the player(s) you want to edit before you go in. You can get away with just editing the special team units of the team you are going to play against. That's what I did with the Falcons (I played as the Bears) and I got it the first game.
I'm not sure it helps that much, as the Falcons are shit anyway. Just run the ball with Hester, run across the pitch and towards your own sticks if necessary.
