Just keep trying - I'm playing some of the missions the same way time after time and then getting lucky. I've found that the more A finishes I'm getting on side missions, the better the car and my shooting/damage are, this helps.
It's about not rounding a corner as you;'re about to complete a mission and hitting a truck head on, so sometimes it's dumb luck.
Frustrating game but I keep going back to it.
