I highly recommend purchasing iWork '08 which is Apple's productivity suite. It included Pages, Numbers and Keynote. All can be exported to Office documents so PC users can open them. I've tried this with my teachers and they've never had trouble opening any of my documents from iWork. The layout of all 3 applications are much cleaner and easier to navigate. Not the mention the templates that are pre-installed.

I have a white MacBook and I've been loving Leopard.

1) Are there any programs that are must-haves for a mac user?
The only other app I can recommend is handbrake, and mac the ripper

Handbrake recodes vob to xvid/mp4 format, mac the ripper rips dvds.

MSN is also available for Mac OSX: Mactopia - Discover Office 2008 for Mac from Microsoft

2) Do you have any advice for a new mac user like myself?
Install Boot Camp, and then Windows Xp..... Nah, This doco from apple should make your life alot easier: Mac OS X keyboard shortcuts

3) Do you know of any great note-taking programs for class? (I am a graduate student and need to take quite a bit of notes. I used OneNote on my windows laptop and I need a replacement. I don't want to take notes on just a word processing program, and I need it to be freeware if possible.)

No idea. Text Edit Maybe?

4) Is there a free way to share media from my macbook to my 360?

Yep, Connect360 is probably the best MacOSX software, but will cost you around $20USD.

Tufo, try a program called MediaTomb or uShare...if im not mistaken, one of those runs on mac......but im thinking its mediatomb and not uShare

I have had a MacBook for some time know and i love it.
I suggest you buy Microsoft Office for mac its has all the must haves like Word, PowerPoint and Exal. Cost me $300

There is a great Download section on the apple website were you can download all sorts of programs from Paint to MSN all for free you should check it out.

Both are linux applications, and are a pain in the arse to get working on a Mac if you have no command line experience.

GeeXboX actually needs to be compiled for MacOSX.

I just got done doing some research at the Apple site. It's just a darn shame that these new 13" Macbooks start at $1299 and the 15" start at $1999. That's just seriously waaayyyy to much money for what you get. I just don't see a Mac in my future any time soon. I just cannot justify this much money. Seriously, $1999 is enough for a decent laptop and a gaming desktop machine
