HDMI will make some difference. Picture wise...HDMI, VGA, and Component look the same on most TVs. However, HDMI will allow for DVD Upconversion and most all current 1080p TVs accept 1080p via HDMI.
At the same time...1080i and 1080p look pretty much the same on most TVs and so the biggest advantage is being able to watch Upconverted DVDs from the 360 via HDMI.

VGA for me ..... colours appear more natural and not as saturated as component. And the dvd upscaling is a plus.

The difference in colors is usually a difference in settings, not an actual increase in picture quality. If you calibrated both inputs you'ld find them to be rather similar color wise.
