Screen size is relative to viewing distance. If you're 2' away from 22" you're better off than if you're 15' away from 55" for example

But... does the Xbox 360 HDMI cable pack include a RCA to minijack (stereo) adapter? or do i have to buy that seperately?

it only includes the HDMI cord and the Optical/RCA Audio Adapter

you're probably better off just getting a single HDMI cord, it's a lot cheaper (if you buy from the right places). But do what you want I guess...

But then I don't get sound, 'cause my monitor only uses VGA and DVI-D signals. So I need a RCA to minijack converter, no matter if I choose the digital or the analog solution.

Every 22" screen I've ever seen has a resolution of 1680x1050.

1080P doesn't fit into that last time I checked, and if you select 1080P on that monitor, you'll loose veritcal sync, and just get a power save mode.
PC monitors don't scale like LCD TV's do.
If you use the VGA cable, you can pick VGA resolutions.
