Nope, Component and HDMI(as well as VGA and DVI while we're at it...) all have the same picture quality. It can vary slightly between displays, but ideally they should all look the same. Generally, any difference in picture quality perceived is just from the HDTV's settings and once calibrated the pq will be identical.
That said, I use HDMI whenever possible as it is digital and more or less today's home theater standard.

Too bad I didn't see this 2 weeks ago when I purchased my Samsung 50" plasma TV. I went through months of researching before making my decision. These were all (Mostly) of the questions asked when looking. Be careful about stores like Best Buy wanting to sell you that $300 "Come to your home" and tweak your TV to fine tune the colors. Here's a web site to give you all the settings you need for your HDTV to fine tune your tv.

need some advice

Would like to stay around $800-$1000 And i am not sold on the 1080p, 720p would be fine.

Strickly gaming already have 52" samsung in front room.
Are you interested in a projector? If so, can you completely control the lighting in your room?

Are you looking for a new surround sound setup as well?
No have Mirage nonosat 5.1
Is there anything else you think we should know?
I have been told that plasma's are better for gaming due to there 600hz capabilitys. I am leaning toward a samsung 650 series plasma, But i have been told panasonic tv's are more reliable and better picture for the buck., I don't want a bunch of features that i wont use, Dont need pc input and others, just for gaming period, On a 360 of course. Thank you for your help.
