Ok, I found the text by Stevie to get him his first car, but I cant do anything with it. I cant respond to it etc, all I hav ethe option to do is delete!
Ive completed the story etc, does that mean Ive missed out on Stevie's missions?

No if you read the text it should have a picturte of the car he wants, and a brief description of where it is.
Set a waypoint for that particular area (it isn't precise so you will have to do a bit of searching without a guide) and find the car.
Once you find it, a blip will appear on the HUD of where to take it.

Carefull Ifti, there really isnt a blip. But if you go to the in game map there will be a Garage Icon in that is east of your Northeastern Hideout.

Cheers, I found the garage etc and delivered the first car. However, I havent received a text for the next car??
Is this because Ive completed the main story and Stevie isnt in my phonebook etc?

^^ It just takes a while. To speed up the process, just go to the safehouse closest to the garage and save your game. You'll get a new text as soon as you wake up.

I also found this for pinpointing the cars easily..
GTA IV Stevie's Car Thefts
Its the last of the side missions before I finish them all. Not bothered with achievements etc, just wanna make sure I do all missions.

I saved mine everytime I got a car delivered. I'm not sure whether you know or not, but the better condition the car is delivered in the more $$$'s you get?
There is a P&S round the corner though for if you remove bumpers etc on your way
