Amongst the Catacombs of Nephren-Ka is my favourite album by them, although Ithyphallic has lots of plays by me.
The Essential Salts have some of the best lyrics I've heard.

Lamb of God was my push into the metal world. I had always liked In Flames, but only certain songs. I became hooked on Lamb of God, Sacrament did not leave me car's cd player for about an entire month only to be replaced by another LoG album.
LoG is a mix of metalcore and Groove Metal(often called the new Pantera).
Regarding vocals, you'll find yourself liking it as time passes. Growling adds a certain element of darkness to music that you just cannot get from clean singing or the crappy clean singing found in classic metal or plain heavy metal.
Plus, a good growling vocalist can actually hit different notes. It is by no means an easy task. Lamb of God's vocalist is quite excellent as he employs several different styles of growling and shouting.
About half the time I listen to a new metal band, I'm not a big fan of the vocals. But they seem to grow on me after a few listens and I find myself really liking them. This has happened many many times. I figure it's because our ears are not used to listening to nonclean singing but we are used to hearing guitars, drums, etc. So it takes some time for our brains to acclimate to the new sound while the instruments we've all heard and are easy to like.
They were nominated for a Grammy which is impressive for a metal band.

Thats funny, because I was exactly the same. LoG are what got me into metal. They are one of my favourite bands.

As for Opeth, they're farking awesome as well. Ghost Reveries is their best album, IMO, and I love the Damnation album, because I get to listen to Opeth, and it's mellow enough that the GF likes it as well

I listened to Black Seeds of Vengeance for the first time(three times actually). It's excellent.
I haven't listened to much Opeth...don't think I'll find time to either

Amgonst the Catacombs is good, but I didn't care for the first track. Not sure why really. I like their 2nd album more so far. Ithyphallic is decent too and rather different.
I got Ithyphallic first from BB because I had to use up store credit. Then I decided to go back and listen to their stuff sequentially.
I'll be listening to Black Seeds of Vengeance for at least a couple weeks before I venture on to their next album.

Yeah they're a great beginner's metal band. I would bring Ashes of the Wake to demo speakers...loved seeing the reaction of salesmen

You should check out old school In Flames, Dark Tranquility, Droid, Bloodbath, Hypocrisy, Lamb of God based on your list. You ever hear any Black Metal?
