I have played both and I own a 360 and a Wii so I am unbiased.
I thoroughly enjoyed the 360 version more than the Wii. I found the controls
fine as I don't enjoy waving your arms around madly in a vague attempt to
pretend you're in the game. The visuals were stunning. They knocked me flat.
I died at the beginning because I forgot I was playing, I just sat and took it all in!
The gameplay was brill, if a little easy. I would just click attack and 4 troopers would
die. It was a little easy

The customization was great! Loved changing the armor he had, as I always prefer
armor over weapons in all types of RPG's. The storyline was extremely well
thought out. I loved every moment of it. Great characters too.
But the Wii, hehe... Well. That was a different case.
I looked at it, and I was waiting for the stunning cinematic entrance to come on, and then this PS2 game came on. I was like, "When does the cutscene start?" and then
I realised. This
was the cutscene!! You just couldn't tell the difference because
the graphics were so $h!t. I also didn't find it entertaining "waving your arms around madly in a vague attempt to pretend you're in the game". It just got tiring. Sure,
at the beginning you thought "Wow, I'm swinging a lightsaber!" but after, say, half an hour; you start to tire of it. It really wasn't that inspiring. If you had a choice I would definitely say the 360 or PS3 version, although I haven't had the chance to play the PS3 version yet.
