For a HDTV you won't want to use the yellow one
Depending on your TV you could use a HDMI > DVI cable or a HDMI > HDMI cable or even the RGB composites on the standard AV cable for the video.
For audio you have the option of the red and white composites on the AV cable or the fibre optic output. The composites will give you stereo but the fibre optic will give you 5.1 I believe.
Alternatively if your TV will take HDMI then you could output the audio from your TV through composite connections to your receiver.
If you go the HDMI > DVI route you will need to mod the AV cable by taking the casing off so you can plug both in to still be able to have audio out to your receiver.
(although I think the Elite comes with a special cable)
I think that covers it... why MS didn't put audio ports on the 360 I don't know
