transfer memory card data to a hard drive

Ive used the search function but cant find the answer I need. I know that transfering data from hd - hd you need the transfer cable but how do you transfer the data off the memory card to the hd ?

can I just load up a game with the memory card in then take it out, and when the system says there is no memory unit installed can I then just plug in the HD and save it on to it that way ???
