Yeah, you don't need a cross over cable for GigE adaptors, they have auto switch sensing, so the adapter can tell if it's direct connected to another machine or a switch, and transmit data accordingly.
Get the latest drivers for your NIC, it may help.

Well, I updated the drivers for my computer's NIC, but I still have the same problem. I think it has something to do with the 360.

Its only 100 meg. I'm curious as to why you want gigabit between the two. Dont need gigabit for anything on a 360. Not even media streaming. You would only benfit if you do mass file transfering back and forth between the box and PC. But streaming should be no problem. I haven't experienced any media stream lag on 100meg.

I run a Gb switch between my 360 and PC but it doesn't do me any good. The only reason I have it is because its between my sever and my 3 other workstations. Basically its a waste of time to worry about trying to connect it in Gbit since there isn't any resources the 360 needs at that speed.

The 360 only has a 100MB interface. It's pointless to try to get to 1gbps since your internet connection is certainly FAR, FAR less than this.
