Changing between hard drives

Hello all,
this is my first post here, I thought you guys should know!

I've been planning to buy a new 60gb hard drive for my x360, because the original 20gb (something like 12 IRL) just can't hold everything I wanted it to.
And my problem is, that I'm not sure how to get my save-files from the old Hard drive to the new one, since changing the HD's every once in a while can be a pain. Nor have I got a friend who'd have a memory unit to lend.

So, first thing:

Is it possible to remove the HD while playing a game, let's say FIFA, which isn't installed on the HD, and presumably doesn't use it to anything, except for saves of course? I realise this is risky, but that way I could be able to save the game that's on, to the new HD.

Second thing:

Can I re-download something to my new HD that I have already bought and downloaded to my old HD. Let's say, for example, The Lost and Damnded for GTA4?

I am not exactly sure but i think there is a cable that you connect to your computer to put everything from your original hard drive onto a new hard drive

So,
basically you're saying that I can move files to my PC and then move them again onto my new xbox HD?

If I was you I would just spend the little extra and get the 120gb, it comes wit the transfer cable.

I didn't know the cable existed in that package. Well, then that would make it a better purchase.

Edit: Just to make sure: Even though I'd buy the 60gb one, I'm still able to log in with my account information in that HD as well as with the old one, right?
